Penne with Smoked Bacon and Pistachio
- Giuliano's Extra Virgin Olive Oil
- 1 Onion
- 50 ml Single Cream
- 1 Tbsp Mascarpone Cheese
- 1 Tsp Pistachio Pesto
- 50g Smoked bacon
- Salt & Pepper
Finely chop the onion and smoked bacon and fry on low heat in Giuliano's Organic Olive Oil.
Once browned, add two tablespoons of Pistachio Pesto, 50 ml Single Cream and a generous tablespoon of Mascarpone.
Stir for two minutes before seasoning with salt and pepper. Turn off the heat and add to drained pasta.
Serve with a sprinkle of Parmesan
